Pineapple Coconut Pie

1 c Cold Milk

1 pkg (3.4 oz) Instant Vanilla Pudding Mix

1/2 c Flaked Coconut

1 can (8 oz) unsweetened, crushed Pineapple, drained

1 Pastry Shell (9"), baked

Whipped Topping, optional

In a large bowl, whisk milk and pudding mix for 2 min. Let stand 2 min or until thickened. Stir in coconut and pineapple. Pour into pastry shell. Chill for at least 2 hrs. Garnish with whipped topping if desired. Yields 8 servings.
