Pumpkin Coffee Cake

 

Ingredients

1 pkg. (16 oz) Pound Cake Mix

3/4 cup Canned Pumpkin

6 tbs. Water

2 Eggs

2 tsp. Pumpkin Pie Spice

1 tsp. Baking Soda

TOPPING:

1/2 cup Chopped Pecans or Walnuts
1/2 cup Brown Sugar
1/4 cup All Purpose Flour
3 tsp. Butter, melted

Preheat oven to 350 degrees.

In large bowl, combine first 6 ingredients: beat on low speed for 30 secs. Beat on medium speed for 2 mins. Pour half of the pumpkin mixture into a well greased 9" square baking pan. In small bowl, combine topping ingredients: sprinkle half over batter. Carefully spread the remaining batter. Sprinkle top with remaining topping. Bake 35-40 mins. or until a toothpick comes out clean.

Makes 9 servings.
