Irish Potato Candy

 

Ingredients

1/4 c Butter, softened
1/2 pkg (4 oz) Cream Cheese
1 tsp Vanilla Extract
4 c Confectioners Sugar
2-1/2 c Flaked Coconut
1 tbsp Ground Cinnamon

In a medium bowl, beat butter and cream cheese together until smooth. Add vanilla and confectioners sugar. Beat until smooth. Using your hands if necessary, mix in coconut. Roll into balls or potato shapes. Roll into cinnamon. Place on cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.
