Cook potatoes in a large pan covered with water and 1/2 Tsp. salt. Drain, mash potatoes until smooth. In saucepan, cook and stir butter, cheese, milk and remaining 1/2 Tsp. salt until mixture is smooth. Stir this mixture into potatoes, fold in the eggs. Pour into greased 3 Qt. baking dish. Bake uncovered at 35 degrees for 40 minutes or until puffy and golden brown. Yields 8-10 servings. |
